Review an Overview of Bovine Α-lactalbumin Structure and Functionality
نویسندگان
چکیده
α-Lactalbumin is the second major protein in bovine milk (2-5% of the total protein in bovine milk). The human variant has several physiologic functions in the neonatal period. In the mammary gland, it participates in lactose synthesis and facilitates milk production and secretion. α-Lactalbumin binds divalent cations (Ca Zn) and may facilitate the absorption of essential minerals. Also, it provides a well-balanced supply of essential amino acids for the growing infant. During its digestion, peptides with antibacterial and immunostimulatory properties are formed, thereby possibly helping in the protection against infection. The protein fractions enriched with α-lactalbumin may be added to infant formula to provide some of the benefits of this protein. This article reviews a number of studies which may contribute to a more coherent understanding of the structure and some functional properties of α-lactalbumin.

Study of the Interaction of Cinnamaldehyde with Alpha-lactalbumin: Spectroscopic and Molecular Docking Investigation
Cinnamaldehyde is an important compound of the cinnamon essential oil, and it is responsible for the most of the health benefits of cinnamon. Enriching foods such as milk with cinnamaldehyde can lead to greater utilization of cinnamaldehyde properties. In this study, we investigated the interaction of cinnamaldehyde with bovine alpha-lactalbumin. Analyzing the spectrum of alpha-lactalbumin in t...
متن کاملThe Effect of Hoffmeister Salts on the Chaperoning Action of β-Casein in Preventing Aggregation of Reduced β-Lactalbumin
Protein aggregation and precipitation is associated with many debilitating diseases including Alzheimer's, Parkinson's, and light-chain amyloidosis. β-Casein, a member of the casein family, has been demonstrated to exhibit chaperone-like activity to protect protein form aggregation. Hofmeister salts (lyotropice series) are a class of ions which have an effect on the solubility and also the stab...
متن کاملPotential Anticarcinogenic Peptides from Bovine Milk
BOVINE MILK POSSESSES A PROTEIN SYSTEM CONSTITUTED BY TWO MAJOR FAMILIES OF PROTEINS: caseins (insoluble) and whey proteins (soluble). Caseins ( α S1, α S2, β , and κ ) are the predominant phosphoproteins in the milk of ruminants, accounting for about 80% of total protein, while the whey proteins, representing approximately 20% of milk protein fraction, include β -lactoglobulin, α -lactalbumin,...
متن کاملThe cytotoxicity of BAMLET complexes is due to oleic acid and independent of the α-lactalbumin component
Lipid-protein complexes comprised of oleic acid (OA) non-covalently coupled to human/bovine α-lactalbumin, named HAMLET/BAMLET, display cytotoxic properties against cancer cells. However, there is still a substantial debate about the role of the protein in these complexes. To shed light into this, we obtained three different BAMLET complexes using varying synthesis conditions. Our data suggest ...
